{Spicy Dr.Pepper & Chipotle pork}

I cannot claim this recipe as one of my own
but man do we love it! 

I got the original recipe here.

In our home, we love anything spicy
especially if its, "burn your taste buds off" spicy
This pork is not that unfortunately 
but it is pretty spicy
a good kind of spicy
thanks to the chipotle peppers

Ok 
Here's the recipe! 

You will need:
1 pork butt
salt & pepper
2 onions
2 cans of Dr. Pepper
1 can of Chipotle peppers
2 tablespoons borwn sugar
Cut up your onions & place them in the bottom of the dutch oven
Follwed by the pork butt, Fat side up
Open up the can of Chipotle peppers
mmmmmm..
Pour the can of peppers over the pork butt, followed by, salt, pepper, the Dr. Pepper & brown sugar
Place your dutch oven into an oven preheated to 300 degrees
The pork butt will cook for about 6 hours
I turned it twice before the 6 hours was over
After 6 hours, your pork butt will be sooooo tender! 
Pull it out piece by piece & shred it with a fork
Place the shredded pork back into the dutch oven with the dr. pepper/chipotle sauce
Let it soak up the yummy flavors
Serve your meet on a tortilla topped with cilantro, avocado & tomatoe.
Yum!! 

This recipe is soo good! 
The pork comes out perfectly tender & flavorful
The next day, we made sandwiches with some of the left over meat & froze the rest
It makes LOTS
Its also yummy scrambled into some eggs..mmm!
You wont regret making this for your family :)

{rainy day in AZ & welcome baby sydney!}

Yesterday we had the biggest storm i can remember here in AZ
It started sprinkling, then out of nowhere, it started pouring! 
The streets were flooded
the parks were flooded
everything was flooded
Here are some pictures from our neighborhood

Everything was so flooded, people pulled out their canoes & kayaks! 

Before all the excitement of the crazy storm started, I went to the hospital to visit with a dear friend who had delivered her sweet little baby that morning

Sydney was so cute & sweet!!!  I forgot how tiny brand new babies are! 
{& its only been 7 months since mine was that tiny!}
Congratulations again Amy & Zach :)

It looks like it's looking pretty gloomy outside again.. maybe it will rain again today.. We shall see!

{home made baby food: carrots}

I have always known that i wanted to make my own baby food
Reasons? Its easy, its fresh, & i know exactly what is in it, always!

When we first started G on solids, it was a nightmare! 
She did not want to eat from a spoon at all
So we ended up buying organic baby food here and there, just to see what she would eat!
She is getting a bit better now, at least 1/4-1/2 of the food offered actually ends up in her mouth now {instead of on her hands, her body, the floor, me..}
So i knew it was time to start making my own, to have it on hand at all times.
I have made a few others, but today i'll show you how to make carrots 
Carrots are a good "First food", especially when trying to introduce veggies, because they are naturally sweet. 
G Loves them :) 

You will need:
Carrots 
a peeler
water
cuisinart or blender
ice cube trays
a spatula 
ziploc bags
Peel your carrots
Boil them for 15-20 minutes or until they are soft when poked with a fork
Once boiled, break into pieces & place in your cuisinart or blender
Pulse until you reach the desired consistency, adding small bits of water if necessary.
{I added a little less than 1/4 cup of water to my 10 carrots}
G does not like her food purees to be completely smooth. She likes it a little clumpy 
spread your carrot puree into your ice cube tray of choice.
I prefer the silicone because it is VERY easy to just pop the frozen food cubes out because the tray is so flexible
Place your carrot puree in the freezer over night 
The next day, pop out the puree cubes onto a clean surface 
Place your cubes neatly in a labeled freezer bag. 
Place your carrots back in the freezer next to the rest of your homemade baby food cubes :)
The frozen cubes will keep for about 3 months in the freezer

To serve, i usually do 1-2 cubes a a time, depending on how hungry G seems
place cubes in a microwave safe container & put in the microwave.
I microwave in 30 second increments, just making sure i don't make it too hot.
I like to serve it in one of my Le creuset measuring cups, or a small tea cup, they are the perfect size :)
Feed your fresh yummy food to your sweetie! 
& feel proud of yourself for preparing it

{Colorado}

So again, i have been a naughty blogger
It seems ive fallen off the face of the planet! 
but really, we've just been too busy to stop & take a moment to write a post! 
But now we're back :) 
There has been so much going on lately! 

One thing that has kept us busy is our recent trip to Colorado
We weren't near the fire in Colorado springs, so don't worry {What a sad tragedy..}
My grandparents live near Vallecito lake 
Its so beautiful up there
I always look forward to visiting my grandparents, i have so many sweet memories at their place 
It was like my 2nd home growing up.

We had a tiny family reunion at my grandparents house last week
We went, my mom & sis went, My brother & his wife & kids went & so did my cousin & his family
That was all that was able to make it this trip but were planning on doing it again next year, & hoping lots more of my family can go! 

My camera died once we got up the colorado {Of course!} & i forgot my charger {again.. of course}
So i dont have all that many pics. Most of the ones i do have are from instagram! {yay instagram!}
