{vegan kale & pumpkin seed pesto}

We are pesto lovers :) 
Having recently cut dairy out of my diet {for many reasons}, finding a yummy pesto recipe that does not contain cheese is difficult. After making this, it will quickly become a staple in our home, im sure. Its pretty darn delicious.
You will need:
1 large bunch of Kale 
10+ Big basil leaves 
2/3C Curly parsley
2-3 cloves of garlic minced
1/4-1/2 t pepper
1/4 t sea salt
1/4-1/2 C Olive oil
1/4C Pumpkin seeds
Wash all of your greens.
Place HALF of your Kale in a food processor & surge it.
add the other half of kale & surge until very finely chopped
add to your finely chopped Kale: your garlic, Basil, Parsley, pepper, salt, Oliv oil & pumpkin seeds
Surge until it has a paste like texture.
Store in a mason jar or a well sealed tupperware.
My favorite way to use it:
1 box of whole grain pasta
1/2 zucchini
1/2 yellow squash
1 tomatoe
salt 
pepper
{2T kale pesto}
olive oil

Cook your pasta & sautee your veggies.
drain your pasta & add the veggies, olive oil, pesto, salt & pepper.
Let cook for 3-5 min.

add your tomatoes. cook until warmed
& serve! 
Simple & healthy
this dish is good hot or cold
{oh & covered in Sriracha :) mmm!}

  1. This looks delicious! I, too have cut diary out of my diet (allergy). I don't eat meat either so finding delicious recipes that my husband will eat as well is hard! Thanks for sharing!

      I have a slight allergy too , & so does our baby {im nursing} I notice a HUGE difference in how we both feel & how both our skin is when i dont eat dairy. {Plus i have been reading some crazy stuff about dairy..freaks me out} I dont eat eggs either because our baby is sick & grouchy all day whenever i do..
      Lately, we very rarely eat meat, ive had a crazy chicken aversion since i was pregnant! its so strange. Ill have the occassional pulled pork sandwhich or something, but mostly, we eat grains & veggies. {My hubby still loves his meat though!} He is a good sport :) He puts up with my tofu addiction lately haha

  3. i'm definitely going to try this. once i know i can talk a certain cousin of yours into eating it, that is. haha.

    i've been wanting to add in some more vegan recipes to the mix, so i'm excited to see what you share!
